Nadine’s Fiesta Flautas Recipe
Corn tortillas
Roasted green chiles (skinned, stemmed, seeded & chopped)
Mashed avocado
Garlic powder
Softened or creamed cottage cheese (you can use the blender)
Crushed oregano leaves
Juice of a lemon
Onion powder
Avocado should be sprinkled with the juice of a lemon to prevent discoloration. Combine 3 portions of avocado with 1 portion of cottage cheese and mix well. Add in the garlic powder, onion powder, oregano and green chilies and check on taste.
Fry up the tortillas inside a shallow pan for frying in some shortening or oil until it has turned soft then pat dry using paper towels.
Then on a griddle that has been heated already, roll the tortillas up together with a couple tbsps. of the avocado mixture and heat it through and serve while still hot.
